It arrives quietly, toward the end of winter or the very beginning of spring, when there’s often still snow on the ground. Nights remain cold, but the days warm just enough — into the 40s — to signal that the sap is ready to flow.

Maple Season, Rooted in Place

Maple season doesn’t last long. Depending on the weather, it can stretch just four to six weeks — and every day matters.

When temperatures drop below freezing at night and rise above freezing during the day, pressure builds inside the maple trees. That pressure allows sap to move, making it the perfect time for tapping.

It’s a process that relies entirely on nature, timing, and patience. There’s no rushing it.


What Tapping Really Means

Tapping a maple tree is a careful, intentional act. A small hole is drilled into the tree, and a spout — called a spile — is inserted to allow sap to flow out.

At small scale, that sap might drip into a bucket, filling the air with a faint sweetness as it collects. At larger operations, tubing carries the sap through the woods to a sugarhouse, where it will eventually be boiled down into syrup.

We source our maple syrup from Barred Woods Maple, a Vermont sugarhouse that taps thousands of trees each season. Their process is deeply hands-on and shaped by the realities of the land — weather changes, fallen branches, wildlife, and long days that start early and often stretch late into the night.

Producing maple syrup is hard work. It requires constant attention, care, and respect for the environment.
